No-Bake Nutella Cheesecake

Another successful no-bake cheesecake after the oreo-version the other day! This time it is all about nutella. I think it is one of the greatest creations by mankind which I could have every single day if only I'm not so much of a fitness freak. The recipe is actually pretty easy and quick except for the 6 hours of leaving the cake to chill and set. Trust me, I seriously lacked patience on this one.

The Recipe

Ingredients
140 g Butter (melted)
250 g Digestive biscuits (crushed)
450 g Cream cheese
250 ml Heavy Cream (chilled till it's time to use)
60 g Icing Sugar (sifted)
2 Tablespoons Nutella 
Vanilla Extract
4 Ferrero Rocher (chopped) + 3 for decorating (optional)
Chopped Hazelnuts

Steps
  • For the biscuit crust, pulse digestive biscuits and the melted butter in a mixer or food processor.
  • Spread evenly on a springform pan, leave to chill
  • Cream the cheese and icing sugar until well combined
  • In a separate bowl beat the cream and vanilla extract until soft peaks are formed. 
  • Fold the cream into the cheese mixture with a rubber spatula
  • Add the chopped chocolates and 2 tablespoons of nutella, fold again
  • Pour the mixture into the pan with the crust.
  • Chill for about 6 hours before decorating
I used about 4 tablespoons of nutella which I melted using the microwave at high for 20 seconds as a ganache.Then some chopped hazelnuts and chocolates. 

It  tasted heavenly!!!
